A rotina do médico veterinário na inspeção estadual de abate de frangos Araguaína – TO 2022

Abstract

This study aimed to report the routine of the veterinary medical professional in the state inspection of slaughter of broilers. The supervised internship was granted by the Agricultural Defense Agency of the State of Tocantins (ADAPEC-TO), regional of Araguaína, Tocantins and was developed with the Frango Americano slaughterhouse, located at ROD: TO-126, Km 3.5, S/N , Arguianópolis-TO, in the area of Inspection of Products of Animal Origin, totaling 390 hours, from March 7 to May 16, 2022. Among the activities developed, the ante-mortem inspection process was carried out, post - mortem, periodic inspection at the slaughterhouse, fiscal action and administrative acts, flowchart and official verifications of the industry's self-control programs (PAC). During the internship period, the intern went through all sectors within the industry: unloading and hanging, stunning and bleeding, scalding and plucking, evisceration, pre-cooling and re-hanging, cuts, packaging, freezing, storage and shipping. Where, during the internship, I was able to make the most of this experience, being very important for my academic training and professional growth.
